Ingredients

2 medium zucchinis, grated

1 cup yellow potatoes, peeled and grated

1/2 cup finely chopped onion

1 cup shredded sharp cheddar cheese

1/2 cup all-purpose flour (or substitute with gluten-free flour)

1 large egg

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon smoked paprika for added flavor

Salt and pepper to taste

1/4 cup finely chopped fresh parsley (optional for freshness)

Cooking spray or oil for frying

Instructions

Preheat the Oven: Start by preheating your oven to 400°F (200°C). While the oven heats, line a baking sheet with parchment paper to keep cleanup easy and to prevent sticking.

Prepare the Zucchini: Grate the zucchini and transfer it to a clean kitchen towel or cheesecloth. Twist and squeeze out as much moisture as you can. This is essential for achieving crispy tater tots, as excess moisture can lead to a soggy texture.

Combine Ingredients: In a large mixing bowl, mix together the drained zucchini, grated yellow potatoes, chopped onion, sharp cheddar cheese, flour, egg, garlic powder, onion powder, smoked paprika, salt, and pepper. If you're using parsley, add it as well. Stir everything together until it forms a thick, cohesive batter.

Shape the Tots: With your hands, scoop out about 1 tablespoon of the mixture and form it into small, oval-shaped tater tots. Place each one on the prepared baking sheet, ensuring there is a little space between them for even baking.

Bake the Tots: Lightly spray the tops of the tots with cooking spray or drizzle a bit of oil over them to encourage crispiness. Bake in the preheated oven for 25-30 minutes, turning them halfway through cooking to ensure they brown evenly. Look for a golden-brown coloring for the perfect crunch!

Serve: Once baked to perfection, remove the tater tots from the oven and let them cool for a couple of minutes. Serve them warm as a delightful snack or appetizer, accompanied by your favorite dipping sauces like ketchup or ranch dressing.

              Prep Time: 15 minutes | Total Time: 45 minutes | Servings: 4-6

                - Presentation Tip: Arrange the tater tots on a serving platter with a small bowl of dipping sauce in the middle. Garnish with a sprinkle of fresh parsley for a pop of color!
