Zucchini Pita Pizzas

2 large zucchinis, sliced into thin rounds

4 whole wheat pitas

1 cup marinara sauce

1 cup shredded mozzarella cheese

1/2 cup sliced black olives

1/4 cup grated Parmesan cheese

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon dried oregano

1 teaspoon dried basil

Fresh basil leaves for garnish (optional)

Salt and pepper to taste

Preheat the Oven: Start by preheating your oven to 425°F (220°C) to ensure it is hot enough for baking.

    Prepare the Zucchini: In a large mixing bowl, combine the sliced zucchini with olive oil, garlic powder, dried oregano, dried basil, salt, and pepper. Toss everything together thoroughly, making sure each zucchini round is evenly coated with the seasoning mixture.

      Bake the Zucchini: Spread the seasoned zucchini slices in a single layer on a baking sheet. Bake in the preheated oven for about 10 minutes, or until the zucchini are slightly tender and golden. Once done, remove from the oven and set aside to cool slightly.

        Assemble the Pitas: Take a clean baking sheet and arrange the whole wheat pitas on it. Spoon approximately 1/4 cup of marinara sauce onto each pita, spreading it evenly while leaving a small border around the edges.

          Top with Cheese and Veggies: Evenly sprinkle the shredded mozzarella cheese over the marinara sauce on each pita. Layer the baked zucchini rounds on top, followed by generous amounts of sliced black olives. Finally, sprinkle grated Parmesan cheese over everything for an extra cheesy finish.

            Bake the Pita Pizzas: Place the assembled pita pizzas back in the oven and bake for an additional 10-12 minutes, or until the cheese is melted, bubbly, and the edges of the pitas are crispy to perfection.
