2 medium zucchinis

1 cup freshly grated Parmesan cheese

1 cup breadcrumbs (choose Italian seasoned or panko for extra crunch)

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon dried oregano

½ teaspoon salt

Freshly cracked black pepper, to taste

Olive oil spray (for baking)

    Prepare the Zucchini: Begin by washing and drying the zucchinis thoroughly. Cut off both ends, then slice the zucchinis into thin rounds, approximately ¼ inch thick. For a different presentation, you might also opt to slice them into long strips, mimicking the shape of chips.

      Remove Excess Moisture: Arrange the zucchini slices on a clean kitchen towel or several layers of paper towels. Lightly sprinkle salt over the slices, allowing them to rest for about 15-20 minutes. This step helps draw out excess moisture. Once done, pat the slices dry with additional towels to eliminate any remaining moisture.

        Create the Coating: In a shallow dish, combine the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, dried oregano, salt, and freshly cracked black pepper. Mix these dry ingredients thoroughly until uniform.

          Prepare the Egg Wash: In a separate bowl, crack and beat the two eggs until well blended.

            Coat the Zucchini Slices: Dip each zucchini slice into the egg wash, ensuring to let any excess egg drip off before proceeding.
