Prepare the Zucchini: Begin by preheating your oven to 375°F (190°C). Using either a vegetable peeler or a mandoline slicer, create long, thin strips from the zucchinis. Once sliced, arrange the strips in a single layer on paper towels, sprinkle them lightly with salt, and allow them to sit for about 15 minutes. This process helps to draw out excess moisture, preventing sogginess in your rolls.

    Make the Filling: In a large mixing bowl, combine the ricotta cheese, 1/2 cup of the grated mozzarella, grated Parmesan cheese, egg, dried oregano, garlic powder, salt, and black pepper. Stir the mixture thoroughly until all ingredients are evenly blended and creamy.
