Ingredients

3 medium zucchinis

1 cup ricotta cheese

1 1/2 cups shredded mozzarella cheese, divided

1/2 cup grated Parmesan cheese

1 large egg

2 cups marinara sauce (store-bought or homemade)

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Instructions

Prepare the Zucchini: Begin by preheating your oven to 375°F (190°C). Using a vegetable peeler or mandoline, slice the zucchinis lengthwise into thin strips, aiming for about 1/8 inch thick. Sprinkle a light dusting of salt over the strips and allow them to sit for 10 minutes. This will help draw out excess moisture. Afterward, pat them dry gently with a paper towel to absorb the moisture.

Make the Filling: In a medium mixing bowl, combine the ricotta cheese, 1 cup of the shredded mozzarella cheese, grated Parmesan cheese, minced garlic, egg, dried oregano, dried basil, salt, and pepper. Stir the mixture until all ingredients are well integrated and the filling is creamy.

Assemble the Roll-Ups: Spread 1/4 cup of marinara sauce evenly across the bottom of a 9x13 inch baking dish. Take one zucchini strip, place approximately 2 tablespoons of the cheese filling at one end, and carefully roll it up tightly, ensuring the filling stays inside. Position the roll-up seam side down in the baking dish. Repeat this process with the remaining zucchini strips and cheese filling.

Add Sauce and Cheese: Once all the roll-ups are arranged snugly in the baking dish, pour the remaining marinara sauce over the top, ensuring to cover each roll-up. Finish by sprinkling the remaining 1/2 cup of shredded mozzarella cheese evenly over the sauce.

Bake: Cover the baking dish with aluminum foil to retain moisture and bake in the preheated oven for 25 minutes. After this initial baking period, remove the foil and bake for an additional 10-15 minutes, allowing the cheese to bubble and turn a delightful golden brown.

Serve: Allow the roll-ups to cool for a few minutes before serving. For a fresh touch, garnish with fresh basil leaves if desired. Slice into individual portions and serve warm.
