2 medium zucchinis, grated

1 teaspoon salt

1/2 cup all-purpose flour (or substitute with gluten-free flour)

1 large egg

1/4 teaspoon freshly ground black pepper

1/4 teaspoon cayenne pepper (optional, for a kick)

1 cup ripe tomatoes, diced

6 slices of crispy bacon, chopped

1 cup shredded lettuce (choose romaine or iceberg)

4 large flour tortillas or wraps

1/2 cup mayonnaise

1 tablespoon fresh lime juice

Prepare the Zucchini Fritters:
