1 lb boneless, skinless chicken breasts, diced into bite-sized pieces

2 medium zucchini, grated

1 cup rolled oats

1/2 cup almond flour

1/4 cup brown sugar

1 tsp baking powder

1/2 tsp baking soda

1 tsp ground cinnamon

1/2 tsp salt

1/2 cup unsweetened applesauce

1/4 cup honey or maple syrup

1 large egg

1 tsp vanilla extract

1/2 cup chocolate chips (optional)

2 tbsp olive oil, divided

Fresh parsley for garnish (optional)

Prep the Chicken: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Once hot, add the diced chicken pieces. Season with salt and pepper to taste. Cook the chicken for about 5-7 minutes, stirring occasionally, until they turn golden brown and are no longer pink in the center. Once done, remove the chicken from the skillet and set it aside on a plate.

    Prepare the Zucchini Mixture: In a large mixing bowl, combine the grated zucchini, rolled oats, almond flour, brown sugar, baking powder, baking soda, cinnamon, and salt. Stir together until all the dry ingredients are evenly mixed and well incorporated.

      Mix the Wet Ingredients: In a separate bowl, whisk together the applesauce, honey (or maple syrup), egg, and vanilla extract until the mixture is smooth and well combined.

        Combine Ingredients: Gradually pour the wet mixture into the bowl with the dry ingredients. Gently stir until just combined—be careful not to overmix. If you are using chocolate chips, fold them into the mixture at this point.

          Add Chicken Back to Skillet: Return the cooked chicken to the skillet. Create a small space in the center of the skillet for the zucchini cookie mixture.

            Cook on the Stove: Pour the zucchini mixture around the chicken in the skillet, spreading it out gently and flattening it slightly. Cook on medium-low heat for about 10-15 minutes, until the bottom of the mixture is golden brown and set. Carefully use a spatula to flip the mixture over, allowing both sides to cook evenly. If necessary, drizzle a little more olive oil around the edges to prevent sticking.

              Serve: Once both sides are golden and nicely cooked, remove the skillet from heat. Allow it to cool slightly for easier handling. If desired, garnish with fresh parsley. Cut into wedges or scoop portions to serve warm.
