1 cup rolled oats

1 cup grated zucchini (approximately 1 medium zucchini)

1 medium apple, grated (approximately 1 cup)

1/2 cup unsweetened applesauce

1/4 cup honey or maple syrup

1/2 cup milk (dairy or non-dairy alternatives)

2 large eggs

1 tsp vanilla extract

1 tsp ground cinnamon

1/2 tsp baking powder

1/4 tsp baking soda

1/4 tsp salt

Optional toppings: Chopped nuts, seeds, dried fruit, or chocolate chips

Preheat the Oven: Preheat your oven to 350°F (175°C). Prepare a muffin tin by greasing it lightly or lining it with paper liners to ensure easy removal of the cups after baking.

    Prepare the Dry Ingredients: In a large mixing bowl, whisk together the rolled oats, ground cinnamon, baking powder, baking soda, and salt. Make sure the dry ingredients are evenly blended.

      Grate the Produce: Using a box grater, grate the zucchini and apple. Retain the skin on the apple and zucchini for additional nutrients and texture in the cups.

        Combine Wet Ingredients: In a separate bowl, whisk together the grated zucchini, grated apple, applesauce, honey (or maple syrup), milk, eggs, and vanilla extract until everything is well mixed and smooth.

          Mix Together: Carefully pour the wet ingredients into the bowl of dry ingredients. Gently stir the mixture until just combined. It’s important not to overmix; aim for a slightly lumpy consistency.
