4 boneless, skinless chicken thighs

2 tablespoons olive oil

Zest and juice of 2 limes

3 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon chili powder

1 cup quinoa, rinsed thoroughly

2 cups vegetable or chicken broth

1 cup cherry tomatoes, halved

1 cup corn (fresh or frozen)

1 can (15 oz) black beans, drained and rinsed

1 avocado, diced

Fresh cilantro for garnish

Lime wedges for serving

Marinate the Chicken:

    In a medium bowl, whisk together the olive oil, lime zest, lime juice, minced garlic, cumin, smoked paprika, chili powder, salt, and pepper.       Cook the Quinoa:

        In a medium saucepan, bring the vegetable or chicken broth to a boil over medium-high heat. Stir in the rinsed quinoa, then reduce the heat to low.
