Ingredients

4 salmon fillets (approximately 6 ounces each)

2 lemons (one sliced into rounds, the other for juicing)

4 tablespoons extra-virgin olive oil

4 cloves garlic, finely minced

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

1 tablespoon fresh parsley, chopped (or 1 teaspoon dried parsley)

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

Sea salt and freshly cracked black pepper to taste

1 teaspoon paprika (optional, for added color and a hint of flavor)

Fresh parsley or dill sprigs for garnish

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C) to ensure it's hot and ready for the salmon.

Prepare the Marinade: In a small mixing bowl, whisk together the olive oil, minced garlic, juice of one lemon, chopped dill, parsley, thyme, sea salt, black pepper, and paprika (if using). Blend thoroughly to create a flavorful marinade.

Marinate the Salmon: Place the salmon fillets in a large, shallow dish. Pour the marinade over the fish, ensuring each fillet is generously coated. Cover and let marinate in the refrigerator for 15-30 minutes, allowing the flavors to penetrate the fish.

Arrange the Lemon Slices: Line a baking tray with parchment paper for easy cleanup. Lay the lemon slices in a single, even layer across the tray. This not only enhances the flavor but also prevents the salmon from sticking during baking.

Place the Salmon: After marination, carefully transfer the salmon fillets onto the arranged lemon slices, skin-side down. Drizzle any remaining marinade over the top of the fillets for an extra flavor boost.

Bake the Salmon: Place the tray in the preheated oven and bake for 15-20 minutes. Your salmon is done when it appears opaque and flakes easily with a fork, with an internal temperature of 145°F (63°C).

Garnish and Serve: Once cooked, take the salmon out of the oven and let it rest for a couple of minutes. Garnish with fresh parsley or dill sprigs for a vibrant touch. Serve hot alongside your favorite sides, such as roasted seasonal vegetables or a crisp, refreshing salad.
