Ingredients

12 oz linguine or spaghetti

1 lb large shrimp, peeled and deveined

4 tbsp unsalted butter

3 cloves garlic, minced

1 lemon, zested and juiced

½ cup chicken broth or vegetable broth (for a non-meat option)

1 cup cherry tomatoes, halved

¼ cup fresh parsley, finely chopped

½ tsp red pepper flakes (adjust according to heat preference)

Salt and pepper, to taste

Grated Parmesan cheese, for serving (optional)

Instructions

Cook the Pasta: In a large pot, bring salted water to a rolling boil. Add the linguine or spaghetti and cook according to the package directions until al dente. Drain the pasta, reserving about ½ cup of the cooking water for later use. Set the pasta aside.

Sauté the Shrimp: Heat a large skillet over medium heat and melt 2 tablespoons of unsalted butter. Once melted, add the minced garlic and sauté for about 30 seconds until fragrant, making sure not to burn it. Increase the heat slightly and add the shrimp, season generously with salt, pepper, and red pepper flakes. Cook for approximately 2-3 minutes per side, or until the shrimp turn pink and opaque. Once cooked, remove the shrimp from the skillet and transfer them to a plate, set aside.

Create the Sauce: In the same skillet, pour in the chicken or vegetable broth and allow it to come to a gentle simmer. Stir in the lemon juice and lemon zest, enhancing the vibrant flavors. Add the remaining 2 tablespoons of butter and mix until melted and fully incorporated into the sauce.

Combine Pasta and Sauce: Toss the halved cherry tomatoes into the skillet and cook for 2-3 minutes until they begin to soften. Then, add the drained pasta and the cooked shrimp back to the skillet. Gently toss everything together, gradually adding reserved pasta water as needed to achieve your desired sauce consistency.

Garnish and Serve: Remove the skillet from heat and fold in the freshly chopped parsley. Taste and adjust seasoning if needed. Serve hot, with an optional sprinkle of grated Parmesan cheese on top for a rich and delicious finish.
