4 cups seedless watermelon, cubed

1/4 cup freshly squeezed lime juice (about 2 large limes)

2 tablespoons honey or agave syrup (adjust based on your sweetness preference)

1/4 cup fresh mint leaves, finely chopped (optional, for garnish)

A pinch of sea salt

Prepare the Watermelon: Start by placing the cubed seedless watermelon into a blender or food processor. Blend on high speed until the mixture is completely smooth. If you prefer an ultra-smooth texture, feel free to strain the puree through a fine mesh sieve to remove any pulp.

    Mix the Ingredients: In a large mixing bowl, combine the smooth watermelon puree with the freshly squeezed lime juice, honey (or agave syrup), and a pinch of sea salt. If you’re using mint leaves, add them in as well. Mix everything thoroughly until well combined. Taste the mixture and adjust the sweetness by adding more honey or agave syrup if desired.

      Pour into Molds: Carefully pour the watermelon mixture into your popsicle molds, filling each one about three-quarters full. This allows room for the liquid to expand as it freezes.

        Insert Sticks: Once the molds are filled, take your popsicle sticks and insert them into the center of each mold, making sure they are straight and well-centered.

          Freeze the Popsicles: Place the molds upright in the freezer and let them freeze for at least 4 to 6 hours, or until they are completely solid.

            Unmold and Serve: To release the pops from the molds, run warm water over the outside of each mold for a few seconds until the popsicles loosen. Gently pull on the sticks to remove the popsicles. Serve them immediately, and for an extra touch, garnish with additional mint leaves if desired.
