Ingredients

4 cups watermelon, cut into 1-inch cubes

8 oz feta cheese, cut into 1-inch cubes (opt for brined feta for enhanced flavor)

1 cup fresh mint leaves, roughly chopped

2 tablespoons balsamic glaze

Freshly cracked black pepper, to taste

Pinch of sea salt (optional)

Skewers (either wooden or metal)

Instructions

Prepare the Skewers: If you are using wooden skewers, soak them in water for at least 20 minutes prior to assembly. This prevents them from burning during grilling and helps retain moisture in the watermelon if you choose to grill the skewers.

Assemble the Skewers: Take each skewer and start by threading a cube of watermelon onto it. Follow with a cube of feta cheese, then a few chopped mint leaves. Continue this pattern of alternating ingredients until the skewer is filled, leaving a little space at each end for comfortable handling. Aim for approximately 3-4 watermelon cubes, 3-4 feta cubes, and several mint leaves per skewer for an even balance of flavors.

Drizzle with Glaze: Once the skewers are assembled, arrange them neatly on a serving platter. Generously drizzle the balsamic glaze over the top of the skewers, ensuring each piece gets a hint of sweetness and acidity.

Season: To enhance the flavor, sprinkle freshly cracked black pepper over the skewers. If preferred, add a light pinch of sea salt to bring out the natural flavors of the ingredients.

Chill and Serve: For optimum flavor, allow the skewers to rest in the refrigerator for at least 20-30 minutes. This resting period allows the components to meld together beautifully. Serve the skewers chilled, making them a refreshing appetizer or a delightful snack option.

Prep Time: 15 minutes | Total Time: 45 minutes | Servings: 8-10 skewers

Presentation Tips: Arrange the skewers vertically in a tall glass or on a decorative platter, garnishing with extra mint leaves for an inviting display.
