Ingredients

2 cups fresh watermelon, cubed

1 lb beef sirloin, thinly sliced

3 cups mixed greens (a blend of arugula, spinach, and romaine)

1/4 cup red onion, thinly sliced

1/4 cup feta cheese, crumbled

1/4 cup fresh mint leaves, chopped

1/4 cup olive oil

2 tablespoons balsamic vinegar

1 teaspoon garlic powder

1 teaspoon salt

1 teaspoon black pepper

Optional: a pinch of chili flakes for added heat

Instructions

Marinate the Beef: In a medium-sized bowl, combine the thinly sliced beef with olive oil, garlic powder, salt, and black pepper. Ensure each slice is well coated. Allow the beef to marinate for a minimum of 15 minutes as you prepare the rest of the salad ingredients.

Cook the Beef: Heat a non-stick skillet over medium-high heat. Once hot, add the marinated beef slices in a single layer. Sear for approximately 3-4 minutes on each side, or until the beef is nicely browned and cooked to your desired doneness. Once cooked, remove from heat and let it rest for a couple of minutes before slicing into strips.

Prepare the Salad Base: In a large mixing bowl, combine the mixed greens with the cubed watermelon, sliced red onion, and chopped mint leaves. Gently toss them together to distribute the ingredients evenly.

Make the Dressing: In a small bowl, whisk together the balsamic vinegar and any remaining olive oil from the marinade. For those who enjoy a little heat, feel free to add a pinch of chili flakes to the dressing for an extra kick.

Assemble the Salad Bowl: Transfer the mixed greens and watermelon mixture into a large serving bowl. Arrange the sliced beef on top, followed by a generous sprinkling of crumbled feta cheese.

Drizzle with Dressing: Just before serving, pour the balsamic vinaigrette over the salad bowl. Toss gently to combine the ingredients, taking care not to bruise the tender greens.

Serve: Enjoy the salad right away while the beef is warm, and the greens remain crisp for the best flavor and texture.
