1 head of fresh garlic

1 tablespoon olive oil

12 oz fettuccine pasta

2 cups heavy cream

1 cup freshly grated Parmesan cheese

1 tablespoon unsalted butter

1 teaspoon garlic powder

Salt, to taste

Freshly cracked black pepper, to taste

Chopped fresh parsley (for garnish)

Optional: Pinch of freshly grated nutmeg

Roast the Garlic:

    Preheat your oven to 400°F (200°C). Prepare the garlic by slicing the top off the head to expose all the cloves. Drizzle the exposed cloves with olive oil, then wrap the entire head in aluminum foil. Place it in the oven and roast for approximately 30-35 minutes, or until the cloves are soft and caramelized. Once done, remove from the oven and let it cool slightly before handling.

      Cook the Fettuccine:

        In a large pot, bring salted water to a boil. Add the fettuccine and cook according to the package instructions until it reaches an al dente texture. Once cooked, drain the pasta, remembering to reserve about 1 cup of the pasta water for later use.

          Make the Alfredo Sauce:

            In a medium saucepan set over medium heat, melt the unsalted butter. Carefully squeeze the roasted garlic cloves out of their skins directly into the pan. Using a wooden spoon, mash the garlic into the butter until well combined and fragrant.

              Incorporate Cream and Cheese:

                Gradually pour the heavy cream into the saucepan, continuously stirring to combine. Allow the mixture to come to a gentle simmer. Then, add the freshly grated Parmesan cheese, stirring until the cheese is completely melted and the sauce is smooth.
