1 cup fresh spinach leaves, roughly chopped

1/2 cup bell peppers, diced (choose your favorite color)

1/2 cup zucchini, grated

1/4 cup red onion, finely diced

1/2 teaspoon garlic powder

Salt and pepper, to taste

2 tablespoons olive oil

4 whole wheat tortillas

1/2 cup shredded cheese (optional, feel free to use vegan cheese)

Prepare the Vegetables: In a medium mixing bowl, combine the chopped spinach, diced bell peppers, grated zucchini, and finely diced red onion. Toss until evenly mixed and set aside to allow the flavors to meld.

    Whisk the Eggs: In a separate bowl, crack the eggs and add the milk, garlic powder, a pinch of salt, and freshly cracked black pepper. Whisk vigorously until the mixture is well combined and slightly frothy.
