For the Tofu:

14 oz firm tofu, pressed and drained

2 tablespoons olive oil

2 teaspoons chili powder

1 teaspoon ground cumin

1 teaspoon garlic powder

Salt and black pepper, to taste

Juice of 1 lime

For the Mango Slaw:

1 ripe mango, julienned

2 cups green cabbage, thinly sliced

1/2 red bell pepper, julienned

1/4 cup fresh cilantro, chopped

Juice of 1 lime

1 tablespoon honey or agave syrup (optional)

Salt, to taste

For Serving:

8 small corn or flour tortillas

Sliced avocado (optional)

Lime wedges, for garnish

Instructions
 

Prepare the Tofu:

    - Begin by cutting the pressed tofu into small, even cubes for better cooking.

      - In a mixing bowl, combine olive oil, chili powder, cumin, garlic powder, a pinch of salt, black pepper, and the fresh lime juice. Whisk together to form a marinade.

          Cook the Tofu:
