1 lb ground turkey

1 cup uncooked jasmine or long-grain white rice

1 can (15 oz) black beans, drained and rinsed

1 cup corn (canned or frozen)

1 medium onion, diced

2 cloves garlic, minced

1 red bell pepper, diced

2 teaspoons chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon dried oregano

½ teaspoon salt (adjust according to personal taste)

½ teaspoon ground black pepper (adjust according to personal preference)

½ cup chicken or vegetable broth

1 ripe avocado, diced

½ cup cherry tomatoes, halved

¼ cup fresh cilantro, chopped

Lime wedges, for serving

Instructions
 

Cook the Rice:

    - Begin by rinsing the jasmine rice under cold running water to remove excess starch. In a medium saucepan, place the rinsed rice along with 2 cups of water. Bring it to a rolling boil over medium-high heat. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 15 minutes, or until all the water is absorbed and the rice is tender. Once cooked, remove from heat and let it sit covered for an additional 5 minutes. Finally, fluff the rice gently with a fork.

      Prepare the Turkey Mixture:

        - While the rice is cooking, heat a large skillet over medium heat. Add a drizzle of olive oil to the pan. Once hot, sauté the diced onion and red bell pepper for approximately 5 minutes, or until they begin to soften and become fragrant. Stir in the minced garlic and cook for another 1 minute, just until fragrant.

          Brown the Turkey:

            - Add the ground turkey to the skillet, using a spatula to break it into smaller pieces. Cook the turkey for about 6-8 minutes, stirring occasionally, until it is browned and fully cooked with no traces of pink remaining.
