Ingredients

1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

1 cup fresh pineapple, cubed

1 bell pepper (red or yellow), sliced into thin strips

1 small red onion, sliced into rings

2 cups broccoli florets

4 cloves garlic, minced

1 tablespoon ginger, freshly grated

1 cup teriyaki sauce (store-bought or homemade)

2 tablespoons vegetable oil (for frying)

1 tablespoon sesame oil

1 teaspoon cornstarch (optional, for thickening the sauce)

Cooked rice or noodles, for serving

Sesame seeds and chopped green onions, for garnish

Instructions

Prep the Ingredients: Begin by cutting the boneless, skinless chicken thighs into uniform bite-sized pieces. Chop the fresh pineapple into cubes, slice the bell pepper into thin strips, and the red onion into thin rings. Also, ensure your broccoli is in convenient florets. Set all the prepared ingredients aside.

Marinate the Chicken: In a medium bowl, combine the chicken pieces with half of the teriyaki sauce, minced garlic, and grated ginger. Mix well to ensure the chicken is evenly coated in the marinade. Allow it to marinate for approximately 15-20 minutes while you finalize your vegetable prep.

Stir Fry the Chicken: Heat a large skillet or wok over medium-high heat and add the vegetable oil. Once hot, add the marinated chicken pieces to the skillet. Stir-fry them for 5-7 minutes, or until the chicken is thoroughly cooked and has developed a light golden-brown color.

Add the Vegetables: After the chicken is cooked, introduce the broccoli florets, sliced bell pepper, and onion rings into the pan. Stir-fry everything together for an additional 4-5 minutes, until the vegetables are tender but still retain a satisfying crunch.

Incorporate Pineapple & Sauce: Gently toss in the pineapple chunks along with the remaining teriyaki sauce. If you prefer your sauce to be thicker, mix cornstarch with a tablespoon of water to create a slurry, then stir it into the pan at this stage. Cook everything together for another 2-3 minutes, allowing the flavors to blend beautifully.

Finish Off: Just before serving, drizzle the sesame oil over the stir-fry. Toss everything together one last time to ensure an even coating of flavors.

Serve: Plate the stir-fry over a generous bed of cooked rice or noodles. To add the finishing touch, sprinkle sesame seeds and chopped green onions on top for a pop of flavor and color.
