Ingredients

1 pound pork tenderloin, trimmed and cut into 1-inch cubes

3 tablespoons Dijon mustard

2 tablespoons pure maple syrup

2 tablespoons extra-virgin olive oil, plus more for cooking

3 cloves garlic, finely minced

1 teaspoon fresh rosemary, chopped (or ½ teaspoon dried rosemary)

1 teaspoon smoked paprika for a rich depth of flavor

Salt and freshly cracked black pepper, to taste

Fresh parsley, finely chopped for garnish (optional)

Instructions

Marinate the Pork: In a medium mixing bowl, combine the Dijon mustard, maple syrup, olive oil, minced garlic, chopped rosemary, smoked paprika, salt, and pepper. Whisk the ingredients together until well blended to form a flavorful marinade.

Add Pork: Place the pork cubes into the marinade, ensuring each piece is generously coated. Cover the bowl with plastic wrap and let the pork marinate in the refrigerator for at least 30 minutes. For enhanced flavor, marinate for up to 2 hours.

Preheat the Skillet: Heat a large skillet over medium-high heat. If you prefer, add a drizzle of olive oil to the pan to enhance the cooking process.

Cook the Pork Bites: Once the skillet is hot, add the marinated pork cubes in a single layer, avoiding overcrowding. Allow them to sear without moving them for about 3-4 minutes to achieve a golden-brown caramelization.

Flip and Finish Cooking: Carefully turn the pork bites to sear the other side for an additional 3-4 minutes, or until their internal temperature reaches 145°F (63°C) for perfectly cooked pork.

Garnish and Serve: Remove the skillet from heat. Sprinkle freshly chopped parsley over the pork bites for a pop of color and flavor. Serve immediately as an enticing appetizer or place them over a bed of mixed greens for a delightful main dish.
