Taco Chicken Zoodle Bowls

1 pound boneless, skinless chicken breasts

2 tablespoons olive oil

2 teaspoons taco seasoning (store-bought or homemade)

4 medium zucchinis, spiralized into zoodles

1 cup cherry tomatoes, halved

1 cup corn (frozen or fresh)

1 cup black beans, rinsed and drained

1 small red onion, diced

1 bell pepper, diced (any color)

1 avocado, diced

Juice of 1 lime

Fresh cilantro, chopped (for garnish)

Salt and pepper to taste

Optional toppings: shredded cheese, sour cream, sliced jalapeños

Prepare the Chicken:

    In a medium mixing bowl, combine the chicken breasts with olive oil and taco seasoning. Toss the chicken pieces until they are evenly coated with the seasoning mixture.
