1 cup corn kernels (fresh or frozen)

1/2 cup diced tomatoes (fresh or canned)

1/2 cup diced red onion

1/2 cup shredded cheese (sharp cheddar or a vegan alternative)

Fresh cilantro, chopped, for garnish

Lime wedges, for serving

For the Avocado Drizzle:

1 ripe avocado

1/4 cup Greek yogurt or a dairy-free yogurt alternative

Juice of 1 lime

Pinch of salt, to taste

Water, as needed to adjust consistency
