1/2 red onion, finely chopped

1/4 cup fresh cilantro, roughly chopped

Juice of 1 lime (about 2 tablespoons)

1 jalapeño pepper, seeds removed and finely diced (optional, adjust for heat preference)

1 ripe avocado, diced

Crumbled feta cheese for garnish (optional, adds a salty contrast)

Prepare the Sweet Potatoes: Preheat your oven to 425°F (220°C). In a large mixing bowl, add the diced sweet potatoes and drizzle with olive oil. Sprinkle in the smoked paprika, cumin, salt, and pepper. Toss everything together until the sweet potatoes are evenly coated with the seasoning blend.

    Roast the Sweet Potatoes: Transfer the seasoned sweet potatoes to a baking sheet lined with parchment paper, spreading them out in a single layer to ensure even cooking. Roast in the preheated oven for approximately 20-25 minutes, stirring halfway through to promote even browning. They should be tender when pierced with a fork and have a slight crisp on the edges.

      Prepare the Salsa: While the sweet potatoes are roasting, take another mixing bowl and combine the diced cherry tomatoes, chopped red onion, cilantro, lime juice, and diced jalapeño (if using).
