Ingredients

2 medium sweet potatoes, peeled and diced

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) kidney beans, drained and rinsed

1 can (14.5 oz) diced tomatoes (with juice)

1 medium onion, chopped

3 cloves garlic, minced

1 red bell pepper, chopped

2 cups vegetable broth

2 tablespoons olive oil

2 tablespoons chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (adjust based on your spice preference)

Salt and freshly ground black pepper, to taste

Fresh cilantro, chopped (for garnish)

Slices of avocado (for topping)

Greek yogurt or sour cream (optional, for topping)

Instructions

Prepare the Vegetables: In a large pot, heat the olive oil over medium heat until shimmering. Add the chopped onion and red bell pepper. Sauté gently for about 5 minutes, stirring occasionally, until the onions become translucent and the peppers soften.

Add Garlic and Spices: Stir in the minced garlic, chili powder, ground cumin, smoked paprika, cayenne pepper, along with salt and freshly ground black pepper. Cook this fragrant mixture for an additional 1-2 minutes, allowing the spices to bloom and envelop the vegetables.

Incorporate Sweet Potatoes: Add the diced sweet potatoes to the pot, stirring well to coat them with the spice mixture. Allow the sweet potatoes to cook for around 5 minutes, stirring occasionally, until they start to soften.

Add Beans and Tomatoes: Pour in the rinsed black beans, kidney beans, and the diced tomatoes (including all the juice) into the pot. Gently mix everything together to ensure an even distribution of flavors.

Pour in Broth: Gradually add the vegetable broth and bring the entire mixture to a boil. Once boiling, reduce the heat to low. Cover the pot and let it simmer for 25-30 minutes, or until the sweet potatoes are tender and flavors meld beautifully.

Taste and Adjust: After simmering, taste your chili and adjust the seasoning as necessary with more salt, pepper, or spices. If you prefer an extra kick, feel free to add more cayenne pepper to suit your palate.

Serve: Ladle the hearty chili into serving bowls. Top generously with fresh cilantro, slices of avocado, and if desired, a dollop of Greek yogurt or sour cream for a creamy finish.

Enjoy: Serve hot for a comforting meal that warms the soul and delightfully fills the belly with flavorful goodness!
