2 cups fresh sweet corn (approximately 3-4 ears), kernels removed

1 ripe avocado, diced into bite-sized pieces

1 medium red bell pepper, diced

1/2 cup red onion, finely chopped

1 cup cherry tomatoes, halved

1/4 cup fresh cilantro, finely chopped

1 jalapeño, seeded and finely chopped (optional for additional heat)

Juice of 2 fresh limes

3 tablespoons extra virgin olive oil

Salt and black pepper to taste

Crumbled feta cheese (optional, for topping)

Prepare the Corn: If using fresh corn, bring a medium-sized pot of water to a rolling boil. Add the corn kernels and blanch for 2-3 minutes, or until tender and vibrant. Drain the corn and spread it out on a baking sheet to cool. If using canned corn, simply drain and rinse the kernels under cool water.

    Chop the Vegetables: In a large mixing bowl, carefully combine the diced avocado, diced red bell pepper, finely chopped red onion, halved cherry tomatoes, chopped cilantro, and finely chopped jalapeño (if using). Gently mix with a spoon to avoid mashing the avocado.
