1 lb (450g) ground chicken

1 tablespoon vegetable oil

2 cloves garlic, minced

1 tablespoon fresh ginger, minced

1 red bell pepper, finely diced

1 cup chopped mushrooms (shiitake or button)

¼ cup green onions, sliced

¼ cup water chestnuts, finely chopped

¾ cup sweet chili sauce

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 teaspoon sesame oil

Fresh cilantro leaves, for garnish

1 head of butter or romaine lettuce, separated into leaves

Lime wedges, for serving

Cook the Chicken: In a large skillet, heat the vegetable oil over medium heat. Add the ground chicken to the pan and cook, breaking it apart with a spatula, until it is browned and fully cooked through, approximately 5-7 minutes.

    Add Aromatics: After the chicken is thoroughly cooked, introduce the minced garlic and ginger to the skillet. Sauté for an additional 1-2 minutes until the garlic and ginger become fragrant, making sure not to burn them.

      Mix Veggies: Add the finely diced red bell pepper, chopped mushrooms, sliced green onions, and finely chopped water chestnuts to the skillet. Stir the mixture well and cook for 3-4 minutes, allowing the vegetables to soften and release their juices.

        Create the Sauce: In a separate small bowl, whisk together the sweet chili sauce, soy sauce, rice vinegar, and sesame oil until well blended. Pour this sauce over the chicken and vegetable mixture in the skillet. Stir to ensure everything is evenly coated and let it simmer for 2-3 minutes until heated through and the flavors meld together.

          Prepare Lettuce Cups: Once the filling is ready, remove the skillet from the heat. Take each lettuce leaf and spoon a generous amount of the chicken mixture into the center, forming a wrap.

            Garnish and Serve: Top each lettuce wrap with fresh cilantro leaves for a burst of flavor. Serve your wraps with lime wedges on the side to squeeze over your wraps for an extra zesty kick.
