2 ripe bananas, mashed

1 cup rolled oats

1/2 cup almond butter (or any nut butter of your choice)

1/4 cup honey or maple syrup

1/2 cup unsweetened applesauce

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

1/4 teaspoon sea salt

1/2 cup chopped nuts (such as walnuts or almonds)

1/2 cup dark chocolate chips (optional for extra sweetness)

Instructions
 

Begin by preheating your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, allowing some overhang on the sides to facilitate easy removal later.

    In a large mixing bowl, combine the mashed bananas, almond butter, honey (or maple syrup), unsweetened applesauce, and vanilla extract. Use a fork or a whisk to mix thoroughly until the mixture is smooth and well combined.

      In a separate bowl, blend together the rolled oats, ground cinnamon, and sea salt until evenly mixed.

        Slowly incorporate the dry mixture into the wet ingredients, stirring gently until just combined. Take care not to overmix. Fold in the chopped nuts and dark chocolate chips, if you decide to use them.

          Pour the combined mixture into the prepped baking pan. Use a spatula to spread it evenly, pressing down firmly to ensure it holds together during baking.

            Place the pan in the preheated oven and bake for 20-25 minutes or until the edges turn a lovely golden brown and a toothpick inserted into the center comes out clean.

              Once baked, remove the pan from the oven and allow it to cool in the pan for about 10 minutes. Carefully lift the bars out using the parchment paper and let them cool completely on a wire rack. Once cooled, cut into 12 bars.

                Store the bars in an airtight container at room temperature for up to one week, or refrigerate for an extended shelf life.
