Ingredients

2 ripe bananas, thoroughly mashed

1 cup rolled oats

1 cup milk (dairy or non-dairy option)

1/4 cup honey or maple syrup (for natural sweetness)

1/4 cup peanut butter or almond butter (creamy or crunchy)

1 teaspoon pure vanilla extract

1 teaspoon baking powder

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup mix-ins (choose from chocolate chips, assorted nuts, dried fruits, or fresh berries)

Instructions

Preheat your oven to 350°F (175°C). Prepare a muffin tin by lining it with paper liners or lightly greasing each cup with cooking spray or oil.

In a large mixing bowl, combine the thoroughly mashed bananas, rolled oats, milk, honey (or maple syrup), peanut butter, and vanilla extract. Use a fork or whisk and mix well until all the ingredients are fully blended and smooth.

Sprinkle in the baking powder, ground cinnamon, and salt. Gently stir these dry ingredients into the banana mixture until well integrated.

Carefully fold in your chosen mix-ins such as chocolate chips for sweetness, chopped nuts for crunch, dried fruits for a chewy texture, or fresh berries for a burst of flavor. This is a great moment to add your personal touch!

With a spoon or an ice cream scoop, evenly distribute the mixture into the prepared muffin tin, filling each cup approximately 3/4 of the way full to allow for rising.

Place the muffin tin in the preheated oven and bake for 20-25 minutes. You’ll know they’re done when the tops are gently golden and a toothpick inserted into the center of an oatmeal cup comes out clean.

After baking, let the oatmeal cups cool in the pan for 5 minutes. Then transfer them to a wire rack to cool completely, allowing for better texture.

Enjoy them warm or store any extras in an airtight container in the refrigerator for up to a week. These Sweet Baked Banana Oatmeal Cups make for a healthy and delightful breakfast or snack option packed with flavor!
