Ingredients

2 cups rolled oats

1 ½ cups almond milk (or your preferred milk)

1 medium apple, peeled, cored, and diced (choose a sweet variety like Fuji or Honeycrisp for the best flavor)

¼ cup maple syrup (or honey if preferred)

½ teaspoon vanilla extract

1 teaspoon ground cinnamon

¼ teaspoon ground nutmeg

½ teaspoon baking powder

¼ teaspoon salt

½ cup chopped nuts (consider using walnuts or pecans)

½ cup raisins or dried cranberries (optional, for added sweetness and texture)

¼ cup almond butter (or another nut butter) for drizzling on top

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare an 8x8 inch square baking pan by greasing it or lining it with parchment paper to facilitate easy removal of the squares after baking.

Combine Wet Ingredients: In a large mixing bowl, pour in the almond milk, maple syrup, vanilla extract, and the diced apple. Stir the mixture thoroughly to ensure all the wet ingredients and apple pieces are well combined.

Mix Dry Ingredients: In a separate bowl, combine the rolled oats, ground cinnamon, ground nutmeg, baking powder, and salt. Mix them together until they are evenly distributed, ensuring there are no clumps.

Combine Mixtures: Gradually add the dry oat mixture into the bowl with the wet apple mixture. Stir until the oats are well-coated with the wet ingredients and you have a homogeneous mixture. If you like, gently fold in the chopped nuts and raisins or dried cranberries at this point, distributing them evenly throughout the mixture.

Pour into Baking Dish: Transfer the combined mixture into the prepared baking pan. Use a spatula to spread it evenly, then gently press down on the mixture to compact it, helping it to hold its shape as it bakes.

Bake: Place the pan in your preheated oven. Bake for 25-30 minutes, or until the top is golden brown and feels firm to the touch. Keep an eye on it towards the end of the baking time to achieve the perfect level of doneness.

Cool and Slice: Once baked, remove the pan from the oven and let it cool for about 10-15 minutes in the pan. After it has cooled slightly, use a sharp knife to cut into squares.

Serve: For an extra delicious touch, drizzle each square with almond butter before serving. These squares can be enjoyed warm or at room temperature, making them perfect for any time of the day!
