1 pound potato gnocchi

1 cup cherry tomatoes, halved

1 medium zucchini, diced

1 yellow bell pepper, diced

1 cup sweet corn (fresh or frozen)

2 cloves garlic, minced

3 tablespoons olive oil

1 teaspoon balsamic vinegar

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

Salt and pepper, to taste

¼ cup fresh basil, chopped (for garnish)

Grated Parmesan cheese (optional, for serving)

Cook the Gnocchi: Bring a large pot of salted water to a boil. Once boiling, add the potato gnocchi. Allow them to cook according to package directions, typically 2-3 minutes, or until they float to the surface. Carefully drain the gnocchi and set them aside, making sure not to break them.

    Sauté the Garlic: In a spacious skillet, heat the olive oil over medium heat. Once hot, add the minced garlic and sauté for approximately 30 seconds, stirring continually until fragrant. Be watchful to prevent burning.

      Add the Vegetables: Incorporate the diced zucchini, yellow bell pepper, and sweet corn into the skillet. Sauté the mixture for about 5-7 minutes, stirring occasionally, until the vegetables are tender but still have a slight crunch.

        Mix in Tomatoes and Season: Gently fold in the halved cherry tomatoes and the fresh thyme. Cook for an additional 2-3 minutes, allowing the tomatoes to soften. Drizzle the balsamic vinegar over the mixture and season with salt and pepper to taste, adjusting flavors as desired.
