Ingredients

2 ripe avocados

1 can (5 oz) tuna packed in olive oil, drained

2 tablespoons mayonnaise (for a lighter version, substitute with Greek yogurt)

1 tablespoon Dijon mustard

2 tablespoons red onion, finely chopped

1 tablespoon celery, minced

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

1 tablespoon capers, rinsed and finely chopped (optional)

Juice of 1 lemon

Salt and freshly ground black pepper, to taste

Cherry tomatoes, halved (for garnish)

Lettuce leaves (for serving)

Instructions

Prepare the Avocados: Begin by slicing the avocados in half lengthwise. Carefully remove the pit using a spoon or a knife. Using a spoon, scoop out a small amount of the avocado flesh from each half to create enough space for the filling—be sure to set the removed avocado flesh aside in a small bowl.

Make the Tuna Filling: In a medium-sized mixing bowl, combine the drained tuna with mayonnaise, Dijon mustard, chopped red onion, minced celery, fresh dill, and chopped capers (if using). Squeeze the juice of half the lemon into the bowl. Mix everything together thoroughly. For added creaminess, you can also incorporate the reserved avocado flesh into the mixture. Season the filling with salt and freshly ground black pepper to taste.

Fill the Avocados: Use a spoon to generously fill each avocado half with the tuna mixture, pressing it down gently to pack it in tightly.

Garnish: For a beautiful presentation, sprinkle a bit of extra fresh dill over the top of each stuffed avocado. Add a few halved cherry tomatoes for a splash of vibrant color.

Serve: Arrange the stuffed avocado boats on a platter lined with fresh lettuce leaves. If desired, drizzle a touch more lemon juice over the tops for an added zing.

Enjoy: These delightful avocado boats can be served immediately or stored in the refrigerator until you're ready to serve. They are best enjoyed chilled or at room temperature for full flavor!
