Ingredients

1 whole turkey (12-14 pounds)

1 cup fresh strawberries, pureed

1/2 cup strawberry jam

1/4 cup honey

1/4 cup soy sauce

2 tablespoons Dijon mustard

1 tablespoon apple cider vinegar

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

4 cloves garlic, minced

Salt and pepper, to taste

Olive oil (for rubbing)

Fresh strawberries, sliced (for garnish)

Instructions

Prepare the Turkey:

    - Begin by rinsing the turkey thoroughly under cold water and then pat it dry using paper towels.

      - Carefully remove the giblets and neck from the cavity.

        - Generously rub olive oil all over the turkey, ensuring to coat it well and season both inside and out with salt and pepper to enhance the flavor.

          Make the Strawberry Glaze:

            - In a medium saucepan, combine the pureed strawberries, strawberry jam, honey, soy sauce, Dijon mustard, apple cider vinegar, minced garlic, chopped rosemary, and chopped thyme.

              - Place the saucepan over medium heat and bring the mixture to a simmer while stirring occasionally.

                - Allow the glaze to cook for about 10 minutes, or until it thickens slightly. Once done, remove it from the heat and set aside.

                  Preheat Oven:

                    - Preheat your oven to 325°F (165°C) to ensure it’s ready for roasting your turkey.

                      Apply the Glaze:

                        - Carefully place the turkey in a large roasting pan.

                          - Brush approximately half of the prepared strawberry glaze over the turkey, making sure to apply it thoroughly, including reaching into crevices and under the skin for maximum flavor.

                            Roasting:

                              - Cover the turkey loosely with aluminum foil to prevent it from browning too quickly.

                                - Roast the turkey in the preheated oven, calculating about 13-15 minutes of cooking time per pound.

                                  - For a 12-pound turkey, this will take roughly 2.5 to 3 hours, but always ensure you check the internal temperature.

                                    Baste:

                                      - After the first hour of roasting, carefully remove the foil.

                                        - Begin basting the turkey with the pan drippings and any remaining glaze every 30 minutes.

                                          - Continue this process until the turkey reaches an internal temperature of 165°F (75°C) at the thickest part of the thigh.

                                            Resting:

                                              - Once the turkey is cooked through, take it out of the oven and let it rest for at least 20-30 minutes before carving.

                                                - This resting time is crucial as it allows the juices to redistribute for a moist and flavorful turkey.

                                                  Serve:

                                                    - For a beautiful presentation, garnish the sliced turkey with fresh, sliced strawberries.

                                                      - Drizzle any remaining glaze over the turkey slices to enhance the vibrant look and flavor of your dish.

                                                        Prep Time: 30 minutes | Total Time: 4 hours | Servings: 10-12

                                                          - Presentation Tips: Consider serving the turkey on a large platter with sprigs of fresh rosemary and thyme for added color. The contrast of the bright red strawberries against the golden-brown turkey will create an enticing visual appeal for your festive gathering.
