Ingredients

1 cup couscous

1 cup vegetable broth (or water)

1 cup fresh strawberries, hulled and sliced

1/2 cup crumbled feta cheese

1/4 cup fresh mint leaves, chopped

1/4 cup slivered almonds, toasted

2 tablespoons honey

2 tablespoons balsamic vinegar

3 tablespoons olive oil

Salt and pepper, to taste

Instructions

Cook the Couscous: Begin by bringing the vegetable broth or water to a vigorous boil in a medium saucepan. Once boiling, stir in the couscous, cover the pot with a lid, and remove it from the heat. Allow it to sit, covered, for about 5 minutes or until all the liquid is absorbed. Once done, use a fork to fluff the couscous and set it aside to cool completely.

Prepare the Dressing: In a small mixing bowl, whisk together the honey, balsamic vinegar, and olive oil until well blended. Taste the dressing and add salt and pepper as desired to balance the sweetness with a bit of seasoning.

Mix the Salad: In a large mixing bowl, combine the cooled couscous with the sliced strawberries, crumbled feta cheese, chopped mint leaves, and the toasted slivered almonds. Gently mix them together to ensure an even distribution of ingredients.

Add the Dressing: Drizzle the prepared dressing over the couscous salad mixture. Carefully toss everything together so that the strawberries, feta, and mint are evenly coated with the dressing.

Adjust & Serve: Taste your salad and make adjustments as necessary, adding more salt, pepper, or dressing according to your preference. For a beautiful presentation, consider garnishing with additional mint leaves or a light sprinkle of extra feta cheese on top.

Chill & Enjoy: Transfer the salad to the refrigerator and allow it to chill for at least 30 minutes before serving. This resting period lets the flavors meld together beautifully. Serve the salad chilled or at room temperature for the best experience.

                - Presentation Tips: For an elegant touch, serve the salad in individual portions within glass bowls, allowing the vibrant colors to shine through. Consider drizzling a bit of extra balsamic vinegar on top just before serving for added flavor and visual appeal.
