1 cup couscous

1 ¼ cups vegetable broth (or water)

1 cup fresh strawberries, hulled and sliced

½ cup feta cheese, crumbled

¼ cup walnuts, chopped

¼ cup red onion, finely chopped

¼ cup fresh basil leaves, chopped

1 tablespoon olive oil

1 tablespoon balsamic vinegar

1 tablespoon honey (or maple syrup)

Prepare the Couscous:

      - Once boiling, remove the saucepan from heat and pour in the couscous. Stir gently to ensure all grains are submerged. Cover the saucepan and let it rest for about 5 minutes, allowing the couscous to absorb the liquid completely. After the time is up, fluff the couscous with a fork to separate the grains.

        Toast the Walnuts:
