Ingredients

1 sheet of puff pastry (thawed)

2 cups fresh spinach, washed and roughly chopped

1 cup mozzarella cheese, shredded

1/4 cup ricotta cheese

2 cloves garlic, finely minced

1/4 teaspoon ground nutmeg

Sea salt and freshly ground black pepper to taste

1 egg, beaten (for egg wash)

1 tablespoon extra virgin olive oil

Optional: 1/4 cup grated Parmesan cheese for extra flavor

Sesame seeds (for garnish)

Instructions

Preheat the Oven: Start by preheating your oven to 400°F (200°C) so it’s nice and hot when you're ready to bake.

Sauté the Spinach: In a large skillet, heat the olive oil over medium heat. Once hot, add the minced garlic and sauté for about 30 seconds until it’s fragrant, being careful not to burn it. Then, toss in the chopped spinach and cook until it has wilted down significantly, about 2-3 minutes. Remove from heat, season with sea salt, black pepper, and nutmeg. Mix well and allow it to cool slightly.

Mix the Filling: In a mixing bowl, combine the cooled sautéed spinach mixture with mozzarella cheese, ricotta cheese, and if using, Parmesan cheese. Stir with a spatula until all ingredients are thoroughly combined.

Prepare the Puff Pastry: Dust a clean surface with flour and roll out the thawed puff pastry sheet to enhance its flakiness. Cut the sheet into 3-inch squares evenly with a sharp knife or pastry cutter.

Fill the Pastry Squares: Place approximately one tablespoon of the spinach and cheese filling in the center of each pastry square. Make sure not to overstuff, as this can lead to filling spilling out during baking.

Seal the Puffs: Fold each pastry square diagonally to create a triangle. Press the edges firmly to seal, ensuring no filling escapes. For a decorative touch, you can crimp the edges using a fork.

Apply Egg Wash: Line a baking sheet with parchment paper and carefully transfer the filled pastries onto it. Brush the tops with the beaten egg to help them achieve a beautiful golden hue while baking. For added texture, sprinkle sesame seeds on top.

Bake: Place the baking sheet in your preheated oven, and bake for 18-20 minutes, or until the pastries are puffed up and golden brown all over.

Cool and Serve: After baking, remove the pastries from the oven and let them cool for a few minutes on a wire rack. Serve them warm as a delightful appetizer or a satisfying snack.

                    Prep Time: 20 minutes | Total Time: 40 minutes | Servings: 12 bite-sized pastries

Presentation Tips: Arrange the puff pastry bites on a beautiful serving platter and garnish with a sprinkle of fresh herbs, like parsley or basil, to add a pop of color. Enjoy!
