Spinach Feta Turkey Burgers

1 lb ground turkey

1 cup fresh spinach, finely chopped

1/2 cup feta cheese, crumbled

1/4 cup whole wheat or gluten-free breadcrumbs

1 small onion, finely diced

2 cloves garlic, minced

1 large egg

1 teaspoon dried oregano

1/2 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon olive oil (for cooking)

4 whole wheat burger buns

Fresh lettuce leaves, sliced tomatoes, and red onion rings for serving

Instructions
 

Prep the Mixture: In a large mixing bowl, combine the ground turkey, finely chopped spinach, crumbled feta cheese, breadcrumbs, diced onion, minced garlic, egg, oregano, salt, and black pepper. Using your hands or a spatula, mix the ingredients gently until fully combined, being careful not to overmix.

    Form Patties: Divide the mixture into four equal portions. Shape each portion into a patty that is approximately 1/2 inch thick. Create a small indentation in the center of each patty; this slight dip will help them cook evenly and prevent them from puffing up during cooking.

      Cook the Patties: Heat the olive oil in a large skillet over medium heat. Once the oil is hot, carefully place the patties in the skillet without overcrowding the pan. Cook the patties for about 5-6 minutes on one side, or until golden brown. Flip the patties and cook for another 5-6 minutes, or until the internal temperature reaches 165°F (75°C) and they have a beautiful golden crust.

        Assemble the Burgers: While the patties are cooking, lightly toast the whole wheat burger buns in the skillet or on a griddle until they are just golden. Begin assembling the burgers by placing a leaf of fresh lettuce on the bottom half of each bun. Add a cooked turkey patty on top, followed by a few slices of fresh tomato and red onion. Top with the other half of the bun.
