Ingredients

1 lb (450g) boneless, skinless chicken breasts, diced

2 tablespoons vegetable oil

3 cloves garlic, minced

1-inch piece of ginger, finely grated

1 red bell pepper, finely diced

1 cup shredded carrots

1/4 cup green onions, chopped

1/4 cup fresh cilantro, chopped

1 head of butter lettuce or romaine, separated into individual leaves

For the Spicy Peanut Sauce:

1/2 cup creamy peanut butter

1/4 cup soy sauce

2 tablespoons honey

2 tablespoons rice vinegar

1 tablespoon sesame oil

1 to 2 tablespoons sriracha (to taste)

1 teaspoon lime juice

1 tablespoon water (adjust for desired consistency)

Instructions

Cook the Chicken: In a large skillet, heat the vegetable oil over medium heat. Add the diced chicken and sauté until browned and cooked through, about 5-7 minutes. Incorporate the minced garlic and grated ginger, sautéing for an additional 1-2 minutes until the mixture is aromatic.

Add Vegetables: Mix in the finely diced red bell pepper and shredded carrots. Continue cooking for another 3-4 minutes, allowing the vegetables to soften slightly while retaining their vibrant colors.

Prepare the Peanut Sauce: In a separate medium bowl, combine the peanut butter, soy sauce, honey, rice vinegar, sesame oil, sriracha, lime juice, and water. Whisk until smooth, adjusting with additional water if the sauce is too thick for your liking.

Combine Ingredients: Pour half of the prepared peanut sauce over the chicken and vegetable mixture in the skillet. Stir thoroughly to ensure everything is well-coated with the sauce.

Assemble the Lettuce Boats: Take a large lettuce leaf from the head and spoon a generous amount of the chicken and vegetable mixture into the center of the leaf.

Garnish for Flavor: Drizzle with any remaining peanut sauce, then sprinkle chopped green onions and fresh cilantro over the top for added flavor and a pop of color.

Serve and Present: Arrange the filled lettuce boats on a platter, serving with any extra peanut sauce on the side for dipping. This adds a lovely touch for guests to enjoy even more of the spicy flavor.

Enjoy your delicious Spicy Thai Peanut Chicken Lettuce Boats!
