Instructions

Marinate the Shrimp: In a large mixing bowl, whisk together the olive oil, smoked paprika, ground cumin, cayenne pepper, minced garlic, lime juice, salt, and black pepper. Add the shrimp to the bowl, ensuring they are well coated in the marinade. Cover the bowl with plastic wrap or a lid and refrigerate for a minimum of 15 minutes to allow the flavors to infuse.

Prepare the Mango Slaw: In a separate bowl, combine the finely shredded red cabbage, green cabbage, diced mango, thinly sliced red onion, chopped jalapeño, and chopped cilantro. In a small bowl, whisk together the lime juice, honey, salt, and black pepper until well mixed. Drizzle the dressing over the slaw ingredients and toss everything together thoroughly to combine. Let the slaw sit for a few minutes to meld the flavors.

Cook the Shrimp: Preheat a skillet over medium-high heat. Once the skillet is hot, add the marinated shrimp in a single layer. Cook the shrimp for about 2-3 minutes on each side, or until they turn pink and opaque. Remove the skillet from the heat.

Warm the Tortillas: In a dry skillet or on a grill, heat the tortillas one at a time for about 30 seconds on each side, until they are soft and warm. Keep them wrapped in a clean kitchen towel to maintain warmth.

Assemble the Tacos: Place a few pieces of cooked shrimp on each tortilla. Top with a generous spoonful of mango slaw. If desired, drizzle with additional lime juice for extra zest.

Serve: Arrange the tacos on a platter and garnish with lime wedges on the side, allowing guests to squeeze fresh lime over their tacos for added flavor.
