Spicy Roasted Chickpea Wraps

1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon ground cumin

½ teaspoon cayenne pepper (adjust based on your spice preference)

Salt and black pepper, to taste

4 whole wheat tortillas or wraps

1 cup fresh spinach leaves

1 large avocado, sliced into thin pieces

½ cup cherry tomatoes, halved

¼ cup pickled red onions (optional for added tang)

½ cup Greek yogurt or your favorite vegan dressing (optional for creaminess)

Fresh cilantro, chopped, for garnish

Preheat Oven: Begin by preheating your oven to 400°F (200°C). Line a baking sheet with parchment paper to prevent sticking.

    Prepare Chickpeas: In a large mixing bowl, combine the rinsed chickpeas with olive oil. Sprinkle the chickpeas with smoked paprika, ground cumin, cayenne pepper, and a pinch of salt and black pepper. Toss the mixture thoroughly until the chickpeas are evenly coated with the spices and oil.

      Roast Chickpeas: Spread the seasoned chickpeas evenly across the prepared baking sheet, ensuring they are in a single layer. Place the baking sheet in the preheated oven and roast for 20-25 minutes, or until the chickpeas turn crispy and golden. Shake the pan halfway through cooking to ensure even roasting.

        Warm Tortillas: While the chickpeas are roasting, warm the tortillas in a non-stick skillet over medium heat for 1-2 minutes on each side until they are soft and pliable. Alternatively, you can microwave them for about 10-15 seconds.

          Assemble Wraps: Once the chickpeas are done roasting, take a tortilla and place a generous layer of fresh spinach at the center. Add slices of avocado and halved cherry tomatoes, followed by a few pickled red onions if you're using them. Top it all off with a generous scoop of the crispy roasted chickpeas.
