Ingredients

1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon ground cumin

1/2 teaspoon cayenne pepper (adjust according to spice preference)

1 tablespoon freshly squeezed lime juice

Salt and pepper to taste

4 large whole-grain wraps or tortillas

1 cup shredded red cabbage

1 ripe avocado, sliced

1/2 cup cherry tomatoes, halved

1/4 cup fresh cilantro, chopped

1/4 cup Greek yogurt or dairy-free yogurt (for serving)

Optional: Hot sauce for an extra spicy kick

Instructions

Prepare the Spiced Chickpeas: In a medium mixing bowl, combine the drained and rinsed chickpeas with olive oil, smoked paprika, ground cumin, cayenne pepper (adjust based on your spice preference), freshly squeezed lime juice, salt, and pepper. Stir well until the chickpeas are evenly coated with the spices.

Cook the Chickpeas: Preheat a skillet over medium-high heat. Once the skillet is hot, add the spiced chickpeas. Sauté for approximately 5-7 minutes, stirring occasionally, until the chickpeas become slightly crispy and golden brown.

Warm the Wraps: While the chickpeas are cooking, heat the whole-grain wraps or tortillas in a separate skillet. Warm each wrap for about 1 minute on each side until they are pliable and ready to hold the filling.

Assemble the Wraps: Place a warm wrap flat on a clean plate. In the center of the wrap, layer a handful of shredded red cabbage. Top the cabbage with a generous portion of the sautéed chickpeas, then add slices of ripe avocado and halved cherry tomatoes.

Add Garnishes: Sprinkle the freshly chopped cilantro over the filling, and add a dollop (about a tablespoon) of Greek yogurt on top of each wrap. If you enjoy extra heat, drizzle some hot sauce over the garnishes.

Wrap It Up: Begin by folding the bottom of the wrap over the filling. Next, fold in the sides to secure the filling, and roll tightly from the bottom to enclose everything inside.

Serve: If you prefer, cut the wraps in half for easy eating. Serve immediately with additional lime wedges and hot sauce on the side for those who want an extra kick.

                Prep Time: 15 minutes | Total Time: 30 minutes | Servings: 4

                  - Presentation Tips: Serve the wraps on a colorful platter, with lime wedges artfully arranged around them, and a small bowl of hot sauce for dipping. A sprig of cilantro on top adds a pop of color!
