2 tbsp olive oil

1 small onion, finely chopped

3 cloves garlic, minced

2-3 fresh Hatch green chiles, diced (adjust quantity for your preferred spice level)

1 tsp ground cumin

1 tsp smoked paprika

Salt and black pepper, to taste

1 cup shredded pepper jack cheese

4 large flour or whole wheat tortillas

1 cup baby spinach or a mix of greens

1/2 cup sour cream or Greek yogurt

Fresh cilantro, for garnish (optional)

Lime wedges, for serving

Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and sauté for about 3-4 minutes, or until the onion becomes translucent and fragrant.
