Ingredients

1 lb (450g) boneless, skinless chicken breasts, cut into 1-inch cubes

3 tablespoons olive oil

2 tablespoons soy sauce

1 tablespoon honey

1 tablespoon apple cider vinegar

2 teaspoons chili powder

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon cayenne pepper (adjust to taste)

Salt and pepper to taste

Fresh cilantro, chopped, for garnish

Lime wedges, for serving

Instructions

Marinate the Chicken: In a large mixing bowl, combine the olive oil, soy sauce, honey, apple cider vinegar, chili powder, smoked paprika, garlic powder, onion powder, cayenne pepper, and a generous pinch of salt and pepper. Whisk the mixture well until it's fully blended. Add the chicken cubes, ensuring each piece is thoroughly coated with the marinade. Cover the bowl with plastic wrap and let it sit in the refrigerator for at least 30 minutes, or ideally 1-2 hours, to allow the flavors to penetrate the chicken.

Preheat the Grill: Heat your grill or grill pan over medium-high heat. If you're using an outdoor grill, lightly oil the grates with a paper towel dipped in vegetable oil to prevent the chicken from sticking during grilling.

Skewer the Chicken: If you're using wooden skewers, soak them in water for about 30 minutes to keep them from burning on the grill. Thread the marinated chicken pieces onto the skewers, ensuring to leave a small space between each piece for even cooking.

Grill the Chicken: Place the skewers on the preheated grill. Cook for about 5-7 minutes on each side, or until the chicken is nicely charred and cooked through. The internal temperature should reach 165°F (75°C) for safe consumption.

Serve: Once the chicken bites are perfectly grilled, remove them from the heat. Garnish with freshly chopped cilantro for a burst of color and flavor, and serve with lime wedges on the side for a zesty finish.

Enjoy: These sizzlin' spicy grilled chicken bites are fantastic as an appetizer or a casual snack. Pair them with your favorite dipping sauce or a crisp, fresh salad for a complete meal.
