Ingredients

1 block (14 oz) firm tofu, pressed and drained

1 cup panko breadcrumbs

½ cup all-purpose flour (or gluten-free flour for a GF version)

½ cup unsweetened plant-based milk (such as almond or soy milk)

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

½ teaspoon salt

¼ teaspoon black pepper

½ cup buffalo hot sauce (with additional for tossing)

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Celery sticks and ranch dressing (for serving)

Instructions

Prepare the Tofu: Begin by cutting the pressed tofu into bite-sized cubes or slices, depending on your preference. Use paper towels to pat the tofu dry, removing any excess moisture. This step is crucial for ensuring a crispy texture.

Create the Breading Station: Set up a three-part breading station. In a shallow bowl, whisk together the all-purpose flour, garlic powder, onion powder, smoked paprika, salt, and black pepper. In a second bowl, pour in the unsweetened plant-based milk. In a third bowl, place the panko breadcrumbs, ready for coating.

Coat the Tofu: Take each tofu piece and dip it into the flour mixture, ensuring it is well coated and shaking off any excess flour. Next, dip it into the plant-based milk, allowing any excess milk to drip back into the bowl. Finally, roll the tofu in the panko breadcrumbs, pressing gently to ensure an even and thorough coating for maximum crunch.

Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for approximately 5 minutes. Lightly spray the air fryer basket with cooking spray to prevent the tofu from sticking during cooking.

Air-Fry the Tofu: Arrange the breaded tofu bites in a single layer within the air fryer basket, ensuring they are not overcrowded for even cooking. If necessary, cook in batches. Lightly spray the tops of the tofu with olive oil to enhance crispiness. Air fry the tofu for 15-18 minutes, pausing to flip the pieces halfway through, until they are golden brown and crispy all over.

Toss in Buffalo Sauce: Once the tofu is cooked to perfection, transfer the hot tofu bites into a large mixing bowl. Drizzle the buffalo hot sauce over the top and gently toss until each piece is evenly coated. Adjust the amount of sauce according to your desired spice level.

Serve: On a serving platter, arrange the crispy buffalo tofu bites and sprinkle with freshly chopped parsley for a pop of color. Serve alongside crunchy celery sticks and your favorite ranch dressing for dipping. Indulge in the spicy, tangy flavor explosion!
