Spaghetti Carbonara with Crispy Pancetta

400g spaghetti

150g pancetta, diced

3 large eggs

100g pecorino romano cheese, finely grated

50g parmesan cheese, finely grated

2 cloves garlic, minced

Freshly cracked black pepper, to taste

Salt, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Boil the Pasta:

    In a large pot, bring salted water to a rolling boil. Add the spaghetti and cook according to the package instructions until al dente. Save 1 cup of pasta cooking water, then drain the spaghetti in a colander.

      Cook the Pancetta:

        In a large skillet over medium heat, add the diced pancetta. Cook for about 5-7 minutes, stirring occasionally, until the pancetta is crispy and golden. Once done, transfer it to a plate lined with paper towels to drain excess fat.

          Create the Sauce:

            In a medium mixing bowl, crack the eggs and whisk them together with the grated pecorino romano, grated parmesan, and a generous amount of freshly cracked black pepper until the mixture is smooth and creamy.

              Combine Pasta and Pancetta:

                Return the drained spaghetti to the skillet (make sure the skillet is off the heat). Add the crispy pancetta and toss the pasta to distribute the pancetta evenly throughout.

                  Add the Egg Mixture:

                    Quickly pour the egg cheese mixture over the hot spaghetti, tossing rapidly to coat the pasta evenly. The residual heat from the pasta will gently cook the eggs, forming a creamy sauce. If the sauce appears too thick, gradually add small amounts of reserved pasta water until you reach the desired creaminess.

                      Season and Serve:

                        Taste the pasta and adjust the seasoning with salt and more black pepper if needed. Sprinkle chopped fresh parsley over the top, along with extra pecorino cheese, if desired, for added flavor.
