1/2 teaspoon ground cumin

1/2 teaspoon chili powder

1 pound boneless, skinless chicken breasts, diced into bite-sized pieces

1 red bell pepper, diced

1 green bell pepper, diced

1 small red onion, finely chopped

2 cloves garlic, minced

1/4 cup fresh cilantro, chopped (plus additional for garnish)

1 ripe avocado, diced (for serving)

4 large eggs (optional, for serving)

Lime wedges (for serving)

Instructions
 

Prepare the Sweet Potatoes: In a large skillet, heat the olive oil over medium heat. Once the oil is hot, add the diced sweet potatoes. Season them with smoked paprika, ground cumin, chili powder, salt, and black pepper. Cook for approximately 10-12 minutes, stirring occasionally, until the sweet potatoes are tender and have developed a slight caramelization.

    Cook the Chicken: Once the sweet potatoes are ready, push them to one side of the skillet. Add the diced chicken to the empty side. Cook the chicken for about 5-7 minutes, stirring occasionally, until it’s browned and cooked through.
