Ingredients

1 lb boneless, skinless chicken breasts

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon cumin

½ teaspoon garlic powder

Salt and freshly ground black pepper, to taste

4 cups mixed greens (such as romaine, spinach, and arugula)

1 cup black beans, drained and rinsed

1 cup corn (freshly grilled, canned, or frozen)

1 red bell pepper, diced

1 avocado, diced

½ cup cherry tomatoes, halved

¼ cup red onion, finely diced

½ cup shredded cheddar cheese

¼ cup fresh cilantro, chopped

Lime wedges, for serving

For the Dressing:

¼ cup Greek yogurt or sour cream

2 tablespoons fresh lime juice

1 tablespoon honey (or agave syrup)

½ teaspoon garlic powder

Salt and freshly ground black pepper, to taste

Instructions

Prepare the Chicken: In a small bowl, combine the olive oil, chili powder, cumin, garlic powder, salt, and pepper. Mix well and rub this spice blend all over the chicken breasts until they are evenly coated.

Cook the Chicken: Heat a grill pan or skillet over medium-high heat. Once hot, add the seasoned chicken breasts to the pan. Cook for about 6-7 minutes on each side, or until they're cooked through and the internal temperature reaches 165°F (75°C). Remove from heat and let rest for 5 minutes before slicing into thin strips.

Make the Dressing: In a small bowl, whisk together the Greek yogurt (or sour cream), lime juice, honey, garlic powder, and a pinch of salt and pepper until smooth. Taste and adjust the seasoning if necessary.

Assemble the Salad Bowls: In a large serving bowl or individual bowls, start with a generous layer of mixed greens as the base.

Add Ingredients: Layer the sliced chicken, black beans, corn, diced red bell pepper, avocado, halved cherry tomatoes, finely diced red onion, and shredded cheddar cheese over the greens.

Drizzle Dressing: Drizzle the creamy dressing generously over each salad bowl, ensuring even coverage of the ingredients.

Garnish and Serve: Finish by sprinkling the freshly chopped cilantro on top. Serve with lime wedges on the side, allowing for an extra squeeze of zesty flavor. Enjoy your delicious Southwest Chicken Salad Bowls!
