Ingredients

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

2 tablespoons adobo sauce (from a can of chipotle peppers)

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon garlic powder

½ teaspoon salt

¼ teaspoon black pepper

Juice of 1 lime

8 small corn tortillas

1 cup red cabbage, shredded

1 avocado, sliced

½ cup fresh cilantro, chopped

Salsa, for serving

Instructions

Marinate the Shrimp: In a medium mixing bowl, whisk together the olive oil, adobo sauce, smoked paprika, ground cumin, garlic powder, salt, black pepper, and freshly squeezed lime juice until well combined. Add the prepared shrimp to the bowl and gently toss until the shrimp are completely coated in the marinade. Cover the bowl with plastic wrap and allow the shrimp to marinate for at least 15 minutes; for a deeper flavor, let them marinate for up to 30 minutes.

Cook the Shrimp: Heat a large skillet over medium-high heat. Once hot, remove the shrimp from the marinade, allowing any excess marinade to drip back into the bowl. Carefully arrange the shrimp in a single layer in the skillet. Cook for 2-3 minutes on each side, or until the shrimp turn pink and opaque, indicating they are fully cooked. Once done, immediately remove the skillet from the heat to prevent overcooking.

Warm the Tortillas: In a separate dry skillet heated over medium heat, warm the corn tortillas for about 30 seconds on each side until they are pliable and slightly toasted. Alternatively, wrap the tortillas in aluminum foil and warm them in a low oven (around 200°F) for about 10 minutes if you prefer.

Assemble the Tacos: On each warmed tortilla, layer a few pieces of the cooked shrimp, a generous handful of shredded red cabbage, and a couple of slices of avocado. Finish by sprinkling fresh chopped cilantro on top of the tacos for added freshness.

Serve: Serve the tacos warm with a side of your favorite salsa. For extra zest, consider adding additional lime juice and toppings such as sour cream, lime wedges, or sliced jalapeños to suit your taste.
