Smashed Brussels Sprouts with Garlic

1 pound Brussels sprouts, trimmed and halved

4 cloves garlic, minced

3 tablespoons extra-virgin olive oil

Zest of 1 lemon

2 tablespoons fresh lemon juice

Prepare the Brussels Sprouts: In a large pot, bring salted water to a rolling boil. Add the halved Brussels sprouts and cook for about 8 minutes or until they are just tender. Once they are cooked, drain them in a colander and let them cool slightly to make handling easier.

    Smash the Sprouts: When the Brussels sprouts are cool enough to touch, place each half on a clean cutting board. Using the bottom of a heavy pan or a sturdy glass, gently press down on each sprout until it is flattened to about ¾ inch thick.
