Ingredients

2 pounds beef chuck roast, cut into 1-inch cubes

2 tablespoons olive oil

1 large onion, diced

4 cloves garlic, minced

2 cups Hatch green chiles, roasted, peeled, and diced (or substitute with canned if unavailable)

4 medium potatoes, peeled and diced into 1-inch pieces

3 carrots, sliced into 1/4-inch rounds

2 cups beef broth

1 tablespoon tomato paste

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon dried oregano

1 teaspoon salt, adjust to taste

½ teaspoon black pepper

1 bay leaf

Fresh cilantro leaves for garnish

Lime wedges for serving

Instructions

Prepare the Beef: In a large skillet, heat the olive oil over medium-high heat. Season the beef cubes generously with salt and black pepper. In batches, add the beef to the skillet and brown on all sides for approximately 5-7 minutes per batch. This step enhances the flavor profile by creating a delicious crust. Once browned, transfer the beef to the slow cooker.

Sauté Aromatics: In the same skillet (do not wash it), add the diced onion and minced garlic. Sauté over medium heat until the onions become translucent and fragrant, about 3-4 minutes. This will infuse the stew with rich flavors. Once done, add this mixture directly into the slow cooker with the beef.

Combine Ingredients: To the slow cooker, add the roasted and diced Hatch green chiles, cubed potatoes, sliced carrots, beef broth, tomato paste, ground cumin, smoked paprika, dried oregano, and the bay leaf. Stir thoroughly to ensure all ingredients are well combined and coated with the spices.

Slow Cook: Cover the slow cooker with its lid and set it to cook on low for 8 hours or on high for 4 hours. This slow cooking process allows the flavors to meld beautifully and makes the meat irresistibly tender.

Finish and Serve: Once the cooking time is complete, carefully remove the bay leaf from the stew. Taste and adjust seasoning with additional salt and black pepper if desired. Serve the stew hot, garnished with fresh cilantro leaves for a pop of color and flavor, along with lime wedges on the side for an extra zesty kick.

Enjoy: This hearty stew is perfect for pairing with your favorite crusty bread or warm tortillas, making it a fulfilling and comforting meal for any occasion!
