2 cups cooked chicken, shredded

12 lasagna noodles (no-boil preferred)

3 cups Alfredo sauce (store-bought or homemade)

15 ounces ricotta cheese

2 cups shredded mozzarella cheese

1 cup grated Parmesan cheese

1 cup fresh spinach leaves, chopped (optional)

1 teaspoon garlic powder

1/2 teaspoon Italian seasoning

Salt and pepper to taste

1/4 cup fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Chicken: If not done yet, cook your chicken by grilling, boiling, or baking. Once cooked, shred the chicken into bite-sized pieces and set aside.

    Mix the Ricotta Mixture: In a mixing bowl, combine the ricotta cheese with garlic powder, Italian seasoning, and a pinch of salt and pepper. Stir until the mixture is smooth and creamy, ensuring the spices are evenly distributed.

      Layer the Ingredients:

        - Begin by pouring a thin layer of Alfredo sauce at the bottom of the slow cooker. This will prevent sticking.

          - Carefully place 3 lasagna noodles on top of the sauce. Don’t worry if they overlap slightly; they'll expand as they cook.

            - Next, spread half of your ricotta mixture over the noodles, followed by half of the shredded chicken, and if using, half of the chopped spinach. Top this layer with one-third of the shredded mozzarella.

              - Repeat the layering process: Pour another layer of Alfredo sauce over the mozzarella, place another 3 noodles, spread the remaining ricotta mixture, add the rest of the chicken, the rest of the spinach, and another third of the mozzarella.

                Final Layers: For the top layer, arrange the remaining noodles and spread the rest of the Alfredo sauce. Finish by sprinkling the rest of the mozzarella and all of the grated Parmesan cheese evenly over the top.

                  Cook the Lasagna: Put the lid on the slow cooker and set it to cook on low for 4-5 hours or on high for 2-3 hours, until the cheese is melted and the noodles are tender.

                    Serve the Lasagna: After cooking, turn off the slow cooker and let the lasagna rest for about 10-15 minutes. This makes it easier to slice. Cut into wedges and garnish with freshly chopped parsley for a pop of color.
